A cheese famous worldwide, Blue Castello is Danish in origin, and is sold in small half-moon cardboard boxes.

The cheese is quite modern, being created in the 1960s. It's texture is like brie with thick blue lines. The moist rind is mottled in blue, grey, and brown molds (which is edible). It has a very high fat content at seventy percent.

The interior cheese is enriched with cream, and has a mushroomy aroma.
