Makes two large servings, 350 calories each. Easy to make and unusual enough to bring to potluck suppers.
1/2 Napa cabbage, shredded
1/2 cooked boneless chicken, (you can steam it for about 10 minutes in microwave), finely shredded
cilantro to taste, chopped fine - go easy on the cilantro, you can always add more
1/4 tsp Chinese 5 spice
1 tbsp rice vinegar
1 tbsp salad oil
Thai fish sauce to taste
Dress cabbage, chicken and cilantro with oil, vinegar and seasoning mixture. Garnish with chopped peanuts.
