An unpasteurised cheese of mixed cow's and goat's milk, produced in small truckles, Aromes au Gene du Marc is made in winegrowing regions, several months after the last of the vintage, and is an ideal partner with wine.

Aromes au Gene du Marc has a strong and bittersweet flavour with a distinctively yeasty characteristic. The cheese changes it's texture dramatically during its maturation period, from creamy-moist when young, to flakey-hard when aged.
