There just don't seem to be a lot of recipes mixing apples and sweet potatoes, which I find surprising given how good each food is as a dessert. Here's an easy recipe mixing the two, perfect for the holidays or for any occasion.
Apple-Sweet Potato Bake
Makes 4 servings.
Preheat oven to 350º F. Bring large pot of water to boiling. Drop in sweet potato slices. Cook 15 minutes or until tender. Drain well. Alternate layers of sweet potato, apple, and ham (if desired) in lightly greased 3-quart baking dish.
Combine orange juice mixture, brown sugar, cinnamon, salt and butter in small saucepan over medium-low heat. Heat until butter melts and sugar dissolves. Pour over sweet potato mixture.
To prepare oat topping, mix flour, oats and brown sugar in bowl. Cut in butter until mixture is crumbly. Sprinkle over sweet potato mixture. Bake 30 minutes or until apples are fork-tender, topping is browned, and liquid begins to bubble.
