This is a very versatile
Caribbean hot sauce from the island of
Martinez. Slosh it on anything:
tofu,
seitan (
gluten),
chicken,
lamb,
beef,
fish. Even a little bit on a
pizza could be fun.
What You Will Need
1 tablespoon peeled and slivered or minced garlic
6 scallions, trimmed and minced
1 Scotch bonnet or habanero pepper, stemmed, seeded and minced
Salt and fresh black pepper
1/2 teaspoon fresh ground allspice, or to taste
some boiling water
Juice of 1 lime
What Now?
Just put everything into a jar. Pour boiling water over the ingredients, enough to cover. Add the lime juice. Put the lid on and shake the jar. Take off the lid. There. That was easy.
