Nori Rols
or "Vegetarian Sushi"
Mess around with these. Once you get the basic way to do sushi down, there's really not a lot to it. Pretty much anything can go in sushi.

Ingredients

Slice tofu, cucumber, and carrot into matchsticks. Place a sheet of nori on a cutting board and spread about 1/2 cup brown rice on nori sheet, leaving a 1/2 inch margin on edge. Place a little bundle of "matchsticks" of vegetable and tofu in center and sprinkle lightly with bits of umoboshi paste.

Roll up going towards seaweed margin. Wet margin and seal. Wrap in waxed pape and twist ends. Repeat for each roll.

To eat, open one and peel waxed paper down as you eat. Or, splice into 3/4 inch tall rounds and top each with a little bit of picked ginger or wasabi.

Makes six rolls.
