This medieval recipe is an alternative to modern cordials. It has just as much sugar, but has a unique taste. Rose cordial was drunk by the nobility of medieval Europe.

Ingredients:

Bring the water, sugar and lemon juice to the boil, stirring. Lower heat and simmer for 10 minutes. Remove syrup from heat, and add rosewater and food colour. Cover and cool. Bottle when cool. The cordial should be diluted 1:5 with water before drinking.
