The cabbage palm, also called sabal palmetto, is an evergreen palm tree native to the southeast United States, especially Florida. When young, the trunk is covered with dead stubs of old fronds. As it matures, the stubs fall away to reveal a rough round trunk. It is a hearty plant, so salt-tolerant that it can be found growing on beaches and in brackish swamps.

The tender heart of this palm is edible, and quite delicious when fried or pickled. The flesh has a taste and texture similar to cabbage, hence its name.
