• 1/4 cup flour
• 1/3 cup cornmeal
• 1/2 tsp turmeric
• 1/2 tsp ground black pepper
• catfish fillets
• between 1 and 2 tsp chili powder
• onion, sliced
• american or cheddar cheese, sliced

Dredge catfish in mixture of first four ingredients, fry in hot oil until golden brown, with slices of onion, serve with cheese on buns, or some other form of bread.
