Apple Jacks are one of the lesser inventions to come out of MIT. A highly sweetened multigrain cereal flavored with apple and cinnamon, they were invented as "Apple O's" in 1965 by William Thilly, then an MIT undergrad and now an MIT professor (of Genetics, Toxicology and Biological Engineering). The name "Apple Jacks" was chosen by marketers who thought it sounded more snazzy; presumably the new name was derived from the alcoholic drink Applejack.

When I was a kid, Apple Jacks were a pale orange color. Now they are a mixture of extremely bright orange and extremely bright green colored O's. The colors are so fake and jarring that it makes the cereal seem much less appetizing, but I'm sure they focus group'd it with kids or whatever, so it's probably just me.
