long metal skewers

1 1/2 lbs. fresh chicken/steak/eggplant
2 cups fresh pineapple (or 2 8 oz cans)
1 small red onion
15 average-sized mushrooms
1 bell pepper
1/2 cup low sodium soy sauce
1 tsp brown sugar
2 tablespoon lemon juice
1/2 teaspoon grated fresh ginger (1/4 teaspoon dry ground)
2 cloves of garlic, minced
1 tablespoon vegetable oil

Cut meat, pineapple, peppers, and onion into 1" pieces. Slice mushrooms in half. Mix remaining ingredients and pour over meat and veggies. Marinate for at least one hour and stir three times. Thread meat and veggies on skewers in alternate order. BBQ two to four inches from coals for 5-10 minutes, basting with marinade when rotating kebabs. serve over Calrose variety sticky rice.
