Serves 2
  • 60g yellow corn meal
  • a pinch of salt
  • 125ml cold water
  • 375ml boiling water
  • 125ml low-fat milk
  • 6 dried apricots

Mix the Corn meal, salt and cold water into a paste in a medium sized pyrex bowl. Gradually add the boiling water, combining the ingredients with a balloon whisk. Whisk in the milk. Microwave on Medium-High for about 6 minutes, stirring often, until the porridge thickens. Divide between two bowls, top with dried apricots and serve with a little brown sugar and low-fat milk.
