(Drunken Sauce)

6 pasilla chiles
3 cloves garlic
3 tablespoons olive oil
1 pint pulque
Salt
Freshly ground pepper

Prepare the chiles as follows: Wash the chiles in cold water; remove veins, stems, and seeds; tear them roughly into pieces; place in a bowl and soak them in hot water, about one cup to six chiles, for about an hour. Place them and the water in which they soaked in the electric blender with the garlic and a little of the pulque and blend until smooth. Add the oil, season to taste with salt and pepper, and stir in the rest of the pulque.
