Ah, oatcakes... words cannot describe, but I'll have a go anyway... Oatcakes are a regional speciality of the city of Stoke-on-Trent... you cannot even get them throughout Staffordshire.

Essentially, they are a kind of savoury crepe... made with oat, rather than wheat flour.

To eat them, you warm them in the oven and then fill them with something savoury... usually, bacon, cheese and mushrooms, although sausage has been kown to substitute for bacon, depending upon personal preference. For a vegetarian option, substitute cheshire cheese for the cheddar and add tomato, mushrooms and onion.
