An Indian snack food: yummy, crunchy, deep-fried, thin string-like noodles made from chickpea flour. Sev comes in two sizes, vermicelli-thin and eighth-inch thick. Some sev are rolled in some kind of chili powder.

My preference is for the thin sev, without spices, straight from the bag. I have also been served sev as a garnish on chaat, dal, and saag.
