A traditional form of cheese, very similar to cheddar, but flakier. Red in colour, the red is obtained from an extract of the Annatto berry, an exotic South American spice. Although annatto was originally used simply to colour the cheese, it also contributed the distinctive flavour for which the cheese became renowned.
