Spanish spelling of the original Basque name, patxaran. A pale pink, fairly sweet, spirit, like sloe gin with a hint of aniseed - one end of the continuum of aniseed-based drinks that crosses southern Europe and the Mediterranean. Although Basques will insist that it is a lethal concoction, it is actually only in the region of 25% alcohol by vol. Pleasant served with ice as an aperitif or digestivo, although purists disapprove. After a few somebody will inevitably produce a pun on the basis of "¡No pacharán!", of course.
