A spicy, rich Vietnamese sauce. Usually served with Vietnamese meatballs.
1/4 cup ground roasted peanuts
1 tbsp vegetable oil
2 cloves minced garlic
2 tsp chili paste
1 tbsp tomato paste
1/4 cup chicken stock
1/2 tsp sugar
1 tbsp peanut butter
2 tbsp hoisin sauce
2 tbsp water
Fry the garlic and shallot in the oil for 30 seconds over medium heat. Add 1 tsp chili paste, fry, stirring constantly, for another minute. Lower heat to Low, add remaining ingredients (reserve 1 tsp chili paste and 1/8 cup peanuts). Mix well, simmer for 5 minutes. Pour into serving bowl, garnish with dollup of chili paste and remaining peanuts.
