Nata de coco is a coconut product, produced mainly in the Philippines. It was recently very big in Japan, due to the fact that it is low in calories, high in fiber, good for your digestive system, and very very yummy. Its made by fermenting coconut water or milk with glacial acetic acid and sugar. Its firm, chewy and sweet.

It's used in a number of japanese snacks, like jelly cups, as well as in things like fruit cocktail and pudding.
