For a religion to be established in a nation means that that nation's government officially supports that religion. Often this means that taxes go to pay the clergy or build churches, and that the religion's hierarchs have significant influence in the government. In some cases, going to worship services or professing the creed may be legally mandatory, or other faiths may be officially discriminated against or banned.
