Couverture - from French for coating or covering - is professional quality chocolate which is used by confectioners to enrobe candy or make molds. It has a glossy texture and high percentages of chocolate liquor - to give it a rich flavour - and cocoa butter - to enable it to form a very thin shell. It's usually only found in specialty candy-making shops.
