The Chicken Scratch is another one of those Ragtime Animal Dances.

A One Step variation, the two people execute consecutive pivot steps, which may travel, but more often do not. Whenever either one steps on their right foot they kick their left foot up and back, keeping their knees together. Thus they alternate scratching in the dirt like a chicken.
