A very simple but tasty dish you will find (dirt cheap) on the menu almost everywhere in Portugal. Recipes vary widely, but all include olive oil, potatoes and kale (couve galega), and most a slice of garlicky sausage. Often served with cornbread (broa)
Heat the olive oil in a deep pan and add the garlic. Add the potatoes and water and cook until the potatoes are done. Mash or puree them and add the kale. Bring to the boil and let simmer for 2 minutes, during which you quickly fry the slices of chorizo. Season the soup with salt and freshly ground pepper to taste. Serve in bowls with 2 slices of chorizo each. Enjoy.
