Most honey is made from apiaries that are close to clover. Wildflower honey is made when the hive is close to, well, wildflowers. It is generally a little stronger than normal honey, but since each hive gets its pollen from different flowers, the taste will vary with geography. This inconsistancy prevents mass marketing of wildflower honey, which is why it's usually only available at a farmer's market.
