Ack! Sometimes you’ve made an omelet that has all the right things in it and is going to taste fabulous, but it looks nasty because when you folded one edge over the other, it tore and everything began to ooze out. You need not break down and weep. There is a chance, though slight, to save the situation: Simply put the plate over top the pan. Hold the plate firmly. Pick up the pan with the other hand. Flip. The omelet should now be more or less whole and presentable so that you can impress your friends and confirm the adulation of your fans.
