When someone refers to 'the usual', it begets some kind of familiarity. It is a catch phrase that allows someone to ask or refer to something that is expected or predetermined without actualy referring to it.

A bartender gets to know his customers and can prepare thier favorite drink for them without being having to be asked for anything more than 'the usual'.
