Mom's Swiss Steak

2 pounds, round steak
1/2 cup, flour
2 teaspoons, salt
1 15 ounce can, tomato sauce
1/2 teaspoon, pepper
3 tablespoons, fat
1 small chopped onion

Cut steak 1.5 to 2 inches thick. Mix flour, salt and pepper. Pound into steak with a meat tenderizer or mallet. Brown meat and onion in hot fat. Add tomato sauce and cover. Bake at 350 degrees for 1.5 hours.

Serves 6.


Kansas Swiss Steak

1.5 pounds, top round steak
1 tablespoon, mustard
0.5 cups, flour
salt and pepper
1 cup, sliced onion
1 tablespoon, brown sugar
1 tablespoon, worcestershire sauce
1 diced carrot
1.5 cups, canned tomatoes

Pound mustard, salt, pepper and flour into steak. Brown both sides in fat. Place in small roaster and pour remaining ingredients over the meat. Cover and bake at 325 degrees for 1.5 hours.
