1 Guinea Hen
1 small apple
1 bay leaf
2 sprigs of Parsley
1 clove

Clean the Guinea Hen, fill the cavity with a peeled cored apple cut into quarters, the bay leaf (actually use about a third of the leaf), the parsley and the clove.

Sew up the openings. Roast at 375 F for about 35 minutes, basting frequently with melted butter mixed with a little hot chicken broth or water. Use the drippings to make pan gravy. Serve with pan gravy and red currant jelly mixed with equal parts of applesauce.
