A version of this recipe, using pounded beef steak, appeared in Eros Magazine's article on aphrodisiacs. But this is how to do it with pork...the traditional Jamaican way.

Chop up a large onion, and brown it in a skillet. Also chop up a large tomato. Make a bed of the onions in an 8" square baking dish. Lay the tomato on top of this, and on this, 2 or 4 pork chops. Now cut in half lengthwise 2 or 3 bananas (to form long strips) and lay those on the pork chops. A dusting of cinnamon and/or nutmeg and/or mace goes on the bananas. Cover with foil or waxed paper and bake for 30-45 min in the oven (until pork chops are done), or for whatever microwave conversion factor your unit uses.

I can't vouch for the aphrodisiacal properties here, but it's the easiest way I know of of getting pork chops that aren't dry (and have yummy veggies with 'em, too!)

Adventure club: Add peppers (raw or sauteed) to the tomato/onion mix. Try Plantains or other fruit on top. Isn't cooking fun?
