A delicious combination of three contrasting tastes – sweet pineapple juice, salty soy sauce, and hot red pepper flakes – makes this an excellent choice for marinating chicken or seafood, and can add a zingy punch to rice dishes. After using this as a marinade, it can also do double-duty as a sauce. Bring it to a boil, then reduce it by half. Drizzle over what you have just marinated and serve.

Pineapple-Sake Marinade

Makes about 2 cups.

Combine all the ingredients in a small saucepan and cook over medium heat, stirring constantly, until the sugar is dissolved, 2-3 minutes. Reduce the heat to low and simmer, uncovered, for 45 minutes.

Remove from heat and cool. Use immediately, or transfer to an airtight container and refrigerate for up to 1 month.
