My great-grandmother was a cook for the Swedish king. Family tradition says this was one of his favorite breakfasts. It's a big hit at my house as well.

  1. Mix cranberry juice and water in a pan. Bring to boil.
  2. Whip in cream of wheat.
  3. Stir constantly, 10 minutes if regular cream of wheat, 2 1/2 minutes if quick-cooking cream of wheat. THIS WILL NOT WORK WITH INSTANT CREAM OF WHEAT!
  4. Add vanilla and sugar to taste.
  5. Whip with beaters until approximately double in size, as light pink in color as you can get it. (About 5-10 minutes.)
Serve in bowls of milk (it floats), or just plain, hot or cold. Even if you don't like cream of wheat (which I understand!) try this recipe. It's very good.
