Kilt Lettuce is a
southern delicacy found mainly in
Southern Appalachia. It's also called
Wilted Lettuce, but
Kilt Lettuce is much more common. It's hard to find a recipe, but not that hard to do it. The recipe is usually passed person to person, and it helps to see it made a few times. The recipe can be made
vegetarian, just replace the
bacon with
Bacos. The
vegetarian version is pretty
tasty, and I suggest you go ahead and make either version. You'll be happy you did.
Ingredients
Lettuce - I like Iceberg Lettuce, but any leaf lettuce will do.
Bacon - Diced, about a cup or so. (The more bacon, the better)
Oil
Cider Vinegar - About half a cup.
Green Onions
Salt & Pepper - To taste. I never use it.
First, tear up the lettuce into small pieces, about bite sized. Put the lettuce into a fairly large heat resistant bowl. Cut up some green onion and sprinkle onto the lettuce. If you want, you can salt and pepper the lettuce now, but it's probably best to do it when you serve it. Set the lettuce aside. Now heat up a tablespoon of oil in a pan. Cut the bacon into small pieces, and place them in the pan. Cook the bacon until it is nice and crispy, and the bacon fat and oil is VERY hot. Now slowly (and carefully) pour the mixture over the lettuce. You want the oil to come in contact with as much of the lettuce as possible. (Personally, I pour about half the mixture onto the lettuce, toss the lettuce, and finish pouring)
This next part is a little dangerous, so watch yourself to keep your hands and arms from getting burned. Take your cider vinegar and bring it to a boil in the same pan you cooked your bacon. Let it boil for about ten seconds, then pour it onto your lettuce. (Making sure to cover as much lettuce as possible) Toss the lettuce and serve immediately.
Sit back and enjoy. Southern cooking may kill you faster, but it'll be the most delicious heart attack you'll ever have.
