This is a fairly simple starter, requiring little preparation. Admittedly, it is not as easy as simply cutting up a melon and shoving it in a bowl, but the end result is worth a little extra effort.

You will need, for four:

Lightly fry the prawns, apple, lime rind and chilli in a little olive oil for two to three minutes. Lower the heat, add the lime juice and continue to cook for another two minutes. Remove from the heat, add the Kiwi fruit and serve in sundae glasses.

For variety, this starter also works well with melon balls or grapes. It can also be served with fresh mint as a garnish.

This starter goes well with a light white wine, such as a Soave or a dry Côtes du Blaye.
