Heidi Gruyere is one of the most celebrated fine cheeses in
Australia.
A pure vegetarian gruyere made from cow's milk, is softer when young and ages to become quite hard. It's firm texture is said to be similar to French Beaufort with it's mouthfeel abounding in tiny crunchy crystals. It has a 45% fat content.
It has a sweet pineapple fruity taste. It's considered to be at it's best with ten to twelve week's age on it.
