A very popular element in Mexican food as well as New Mexican food. The flavor and "heat" of green chile as well as red chile can very greatly depending on what kind of chile it is and the amount of rain during the season the chile was grown. If the chile is grown during a dry year it will be hotter than if it was grown in a wet year. Even the minerals in the soil will affect the heat of the chile.
