This is a great starter, and you can make it in ten minutes flat.

Ingredients: (4 generous portions)

  • 2 kohlrabis (peeled if they're very tough, otherwise whole)
  • 4 tablespoons butter
  • 60 grams Parmigiano (Parmesan) cheese, to grate (or any grated dry hard cheese), or 100 grams for a creamier dish
  • 2-3 tablespoons breadcrumbs (double that if using the greater amount of cheese
  • salt and pepper to taste (unless the breadcrumbs are seasoned already)


Chop the kohlrabi into matchsticks, or slightly thicker (you can halve it, then chop or slice each half thinly in one direction, give it a quarter-turn, and slice again). Cook these in the microwave oven with a few spoonfuls of water for about 5-6 minutes (or blanch them in boiling water for a similar period, if you must). Meanwhile, finely grate the cheese.

Toss with the butter. Add the cheese and breadcrumbs and toss again. Nuke again for about a minute, until the cheese melts (still no microwave? pop it in the preheated oven or toaster oven in a suitable dish for a similarly brief stay). Garnish with plenty of fresh basil (or any fragrant herb), and sprinkle with salt and pepper. Serve at once.
