Chilli-Salt Squid is a Szechuan dish, not unlike a delicate gourmet KFC.

Small Squid pieces are dipped in an extremely light and crisp batter then deep-fried. When drained they are sprinked extremely liberally with salt, pepper, chopped chillis and MSG.
