Chicken, Spinach and Ricotta Bake

Ingredients -

1 Tablespoon Olive Oil
1 large brown onion
(200g), chopped finely
2 Cloves garlic, crushed
10 instant lasagne sheets (200g)
1 ½ cups (240g) shredded bbq chicken meat
1 cup (100g) coarsely grated pizza cheese
3 cups (750ml) bottled tomato pasta sauce
2 cups (500ml) water
50g baby spinach leaves
½ cup (120g) firm ricotta cheese, crumbled

Method -

* Heat oil in shallow flameproof dish, cook onion and garlic, stirring, until onion softens

*Break lasagne sheets into bite-sized pieces. Sprinkle pasta pieces, chicken and half the pizza cheese into the dish

* Pour pasta source and water on chicken mixture. Simmer, covered, about 20 minutes or until pasta is tender

* Meanwhile, preheat grill

*Sprinkle dish with spinach, ricotta and remaining pizza cheese; grill 5 minutes or until cheese melts. Stand, covered, 10 minutes before serving.
