Sauces: 19. Cardinal

Pound some spawn of lobster with butter, and stir it into some turned sauce, and work it well over the stove until it becomes smooth; season it with cayenne pepper and salt, the juice of a lemon and a glass of Madeira wine; rub it through a tammy.
