Now, I like cole slaw as much as the next guy, but this simple, simple recipe adds a sweet little twist from the Granny Smith apples that makes it really pop.

Cabbage and Apple Slaw

Serves 4.

Ingredients

• 1 lb. shredded cabbage (about seven cups).
• 1/4 cup chopped red onion.
• 2 Granny Smith apples, chopped.
• 1/2 cup chopped walnuts.
• 1/4 cup cider vinegar.
• 1/4 cup apple cider or juice.
• 1 1/2 tsp. honey.
• 1 tbsp. finely chopped fresh parsley.

Directions

Combine cabbage, red onion, apples and walnuts in large bowl. In small bowl, whisk together vinegar, cider and honey. Add salt and pepper to taste.

Toss dressing with vegetables. Sprinkle with parsley. Chill about an hour, or until ready to serve.
