Beau Jo’s is a pizza joint in Fort Collins, Colorado... well not so much pizza as, what they call, “Colorado Mountain Pies.” My family and I went there while visiting my sister during her first co-op at HP in 96. Beau Jo’s décor is much like an old school pizza hut with framed newspaper cutouts and photographs. The coolest thing about Beau Jo’s was the pictures were of people who had won their contest. Their rules were, if you and one other person can eat an entire 14-pound Colorado Mountain Pie in one sitting, you get 100 bucks and the meal for free. My family of five could barely cap it off... it was f’n enormous.
