You will need
Preheat the oven to 190C/375F/Gas 5.
Grease four medium ramekins with the butter. Then place strips of ham in each ramekin. Then break an egg on top of each piece of ham.
Add a tablespoon of sherry to each ramekin followed by 1floz of the cream.
Finally sprinkle the chives equally over each ramekin, season generously with salt and freshly ground black pepper.
Place in a moderate oven for 6-8 minutes until the eggs are just set.
