Roasted parsnips cut into strips, leek cut into strips, tomato halves (with extra virgin olive oil and basil)
Whole blocks of firm tofu marinated and roasted in sweet and sour glaze (molasses reduced, tabasco, miso, garlic, shallots, salt and cracked pepper)
Plating: a large mound of mashed sweet potatoes in upper centre of plate, strew parsnips and leeks across; roasted tomato half placed to right; slices of tofu to left; garnish with fresh Italian (flat leaf) parsley
