These fruity salsas seem appropriate as warm, summer days approach. They can be used on tortilla chips, fish, and anything that seems to work.

Papaya and Mango Salsa
Yields 2 cups

Ingredients:

  • 1 mango, peeled, seeded, and diced
  • 1 papaya, peeled, seeded and diced
  • 2/3 cup diced red onion
  • 1/3 cup diced sweet red onion
  • 2 teaspoons grated fresh ginger
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lime juice
  • 2 jalapeno peppers, diced
Mix all the ingredients together and let the salsa sit for 30 minutes before serving.

Peach and Tomato Salsa
Yields 2 cups

Ingredients:

Mix all the ingredients together and refrigerate covered, for an hour. Allow the salsa to return to room temperature before serving.
