| A yummy breakfast food, sweet, generally not overwhelmingly sugary like some cupcakes, muffins, or chocolate, making them not only edible but delicious in the early morning hours.
There are two ways to make them, really. Some people take the easy way out and take a white cake mix (really sweet) or a blueberry muffin mix and leave out the blueberries, and add chocolate chips to these, baking as directed. I believe there may be a chocolate chip muffin mix out now, but have no idea truthfully. This is the quick and easy way, when you need your yummy chocolate fix for the morning.
Otherwise:
2 cups All-purpose flour
1/3 cup Light-brown sugar -- packed
1/3 cup Sugar
2 teaspoons Baking powder
1/2 teaspoon Salt
2/3 cup Milk
1/2 cup Butter -- melted and cooled
2 Eggs -- lightly beaten
1 teaspoon Vanilla
1 package -(11.5 oz) jumbo or regular Milk chocolate chips (my note: some people prefer semi-sweet chips).
1/2 cup Walnuts -- chopped or pecans (optional. i don't like nuts in mine, personally).
Preheat oven to 400 F. Grease twelve muffin cups. In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips and nuts. Spoon batter into prepared muffin cups; bake 15-20 minutes, or until a cake tester inserted in center of one muffin comes out clean. Remove muffin tin to wire rack; cool 5 minutes and remove from tins to finish cooling. Serve warm or completely cool. These muffins freeze well.
