Raccoon Stew

This is actually a Japanese stew called "Tanuki jiru". Its really old, and since no one eats raccoons anymore people just use pork. You can easily substitute almost all the ingredients to make any kind of "Japanese" stew you want, as long as you substitute starch for starch, meat-like for meat-like, etc. Keep the miso and the dashi though, they are important!

Ingredients:
Half-Pound of pork (tenderloin works nicely)
1 parsnip
3-4 inches worth of daikon, depending on size (or use 2-3 potatoes)
6 shiitake mushrooms
1 package firm tofu
dashi stock or dashi powder
1 quarter cup miso (the type isn't important)
2-3 green onions
oil for stir-frying

Directions:
Chop the pork into bite-sized pieces. Peel the parsnip and chop into bite-sized half-moon shapes. Peel the daikon and cut into bite-sized squares. Cut the tofu into bite sized-squares. Clean the shiitake with a damp rag, remove the stems and, either leave whole and carve out a cross shape in the top, or chop into quarters. Heat a pot to around medium high (with the oil!) and fry the pork. Add all the other ingredients except the miso, the dashi stock and the green onion. Add enough dashi to taste and lower the heat to medium. Bring to a boil and simmer for 15 minutes to half an hour. Prepare the green onion by slicing into very thin rings. Take some of the stock from the soup, and mix with the miso until the mixture appears smooth. Pour in the miso-stock to taste. Serve hot, and in bowls, with spoons.
