Mango Nectar

An excellent drink for teetotallers, or one if you just fancy a nice refreshing fruity hit. Ideal for serving with West Indian food.

You will need:
3 ripe medium-sized mangoes
juice of 1 lime
1 ½ pt (550 ml) water
raw cane sugar

Peel the mangoes, cut the flesh from the central stone and either rub through a fine sieve or liquidise in an electrical blender. Add to the mango puree, the lime juice and water. Add sufficient raw cane sugar to sweeten, stirring the mixture until the sugar has dissolved. Chill and serve. Makes enough for 3 or 4 people, unless your greedy like me and drink it all yourself.
