Brown Sugar Meatballs
yield: 16 meataballs
get this:
1 cup brown sugar
1 cup ketchup
2 lbs ground beef
3/4 cup milk
3 eggs
1 1/2 tsp salt
1/4 tsp black pepper
1 tsp parsley
1/2 tsp ground ginger
1 med white onion
3 slices bread ( I use white but im sure anything would be fine. Sourdough might give it an interesting flavor.)
1/2 cup parmesan cheese
do this:
1. In a large mixing bowl mix together beef, milk, eggs, bread, ginger, pepper, parsley, cheese, salt and onion. (or rather, everything but the sugar and ketchup...hehe) I know it sounds gross at first, but do this with your hands. Once you get past the ooey gooey nastiness, it's actually quite therapeutic. :) Have fun!
2. Pack the brown sugar into the bottoms of two glass baking dishes and then put a layer of ketchup over the brown sugar. (its easiest to do this right out of a squeeze bottle if you can to avoid upsetting the sugar as much as possible)
3. Form beef mix into 2 inch balls and place on top of ketchup.
4. Bake in a 350 degree oven for 25 minutes, turning balls every 5-7 minutes.
